The GOLD of the SAN FELICE flour range has the excellence of the traditional version and an enhancement of processing performance - thanks to the higher protein content. "Type 00" soft wheat flour obtained from the particularly careful mixing of the best national grains and a higher percentage of the best North American grains, ideal for the preparation of doughs that require long leavening times, and those which use cold technology for maturation. If the correct 'rising' times are observed, the pizza will be very soft, fragrant and above all digestible. The dough obtained with this flour needs to rise from 12 to 24 hours, at a temperature of about 25°C.
